Wild Rice Celeriac Pilaf
Serves 4.
1 Tbsp. olive oil
3/4 c finely diced Red Dog celeriac
1/4 c finely diced Red Dog onion
1 c wild rice, rinsed and dtrained
2 tsp. dried thyme
1 c chicken stock
1 c beef stock
Salt & pepper
2 Tbsp. dried cranberries
Heat olive oil in a skillet. Add celeriac and onion; saute until tender, about 5-7 minutes. Stir in wild rice, thyme, and stocks. Season with salt and pepper. Bring to boil, cover, and lower to a simmer. Cook until rice is nearly tender, 30-60 minutes (time depends on the kind and age of the rice). Stir in dried cranberries; cook until rice is tender, 5-15 minutes longer.
