Wow, Spring heat has hit us full force this year! Here on the farm we are rolling with it, suddenly able to harvest much more varieties of fresh crops and using up the last of our stored roots. It is exciting and energizing! Your CSA this week will be packed with goodies to make salads and my favorite: Iced Mint Tea. I recommend getting a big pitcher if you don’t already have one, boil the mint in a pot of water, add honey, cool, and transfer to the pitcher, then keep in the fridge for a refreshing taste of summer! PS – adding a pinch or two of sea salt can make it more effective at hydrating you. If you want to add fruit that pairs well with mint then it becomes Kompot, a traditional Summer drink from Eastern Europe. This is like juice but better-tasting and better for you!  

Another perk of this week’s CSA is that you all are getting two bunches of greenhouse carrots! It is cool to see the crew harvest them and very rewarding to finally have some new roots grown this year! Most of our crops are grown in the field and not in a greenhouse, so please enjoy these beauties while you can! Once they are harvested, their spot in the greenhouse will promptly be filled again with new crops – perhaps basil, perhaps tomatoes. After all of our greenhouse carrots are gone we won’t harvest carrots in the fields for a short time, until they catch up in growth. Normally I cook my carrots but I prefer these uncooked because they taste so incredibly fresh and are easy to chew. Carrots with hummus have never been better!
