Summer Salad

1 English Cucumber, diced
½ Red Dog Farm Sweet Onion, diced small, or cut into very thin rounds
1 medium, or 3 small Red Dog Farm Zucchini, diced
2 ears Red Dog Farm Sweet Corn, kernels sliced off cob
1 large Tomato, diced, or ½ pint Cherry Tomatoes, halved
Optional: 1 cup cooked garbanzo beans, ½ c. feta cheese, handful of Kalamata olives
1-2 sprigs oregano
Salt to taste

Dressing:
3 Tbsp. olive oil
2 tsp. fresh lemon juice
1 ½  tsp. red wine vinegar
1 Garlic clove, minced
Pepper to taste

Combine all vegetables in a bowl, including any optional ingredients. Strip leaves from oregano leaves and toss into the salad, along with salt to taste. Prepare the dressing in a separate bowl by whisking together all ingredients until smooth. Dress the salad as little or as much as you like. Taste, and adjust seasoning if necessary. Chill for at least half an hour before serving to allow flavors to meld.
