Spinach Strawberry Salad

1/2 lb Red Dog Farm Spinach, torn into pieces
1/2 pint Red Dog Farm Strawberries, sliced
1/4 cup sliced, toasted almonds
1/2 log Plain Chevre, crumbled

1/4 cup wine vinegar
2 Tbs. honey or agave nectar
1 teaspoon Dijon mustard
1/2 cup oil (sunflower, or olive works well)
2 teaspoons poppy seeds

Whisk the dressing together. Mix all ingredients and serve.
