Roasted Balsamic Radicchio

1 head Red Dog Farm Radicchio
2 Tbsp. olive oil
salt & pepper to taste
Thyme (optional)
Balsamic vinegar
Dried cranberries (optional)
Bleu or goat cheese

Preheat oven to 450 F. Quarter the radicchio and toss lightly in olive oil. Season to taste with salt and pepper and thyme if desired. Place on a baking sheet and roast until wilted, about 12 minutes. Turn over and return to oven until tender, about 8 minutes. Drizzle with balsamic vinegar, sprinkle with dried cranberries, and top with cheese. Return to oven until cheese is melted and vinegar is as caramelized as desired.
