Parsnip Fries

1 lb. Red Dog Farm Parsnips
Olive oil
Salt and Pepper

Preheat the oven to 400 degrees. Slice the parsnips like carrot sticks and toss in some olive oil. Sprinkle with salt and pepper. Arrange in a single layer on a parchment-lined baking tray. Bake for 20 minutes or until golden brown. Serve with mayo and ketchup.
