Korean Spicy Garlic Scapes (Maneuljjong Muchim)
| Yields ~2 servings. 1 bunch Red Dog Farm garlic scapes 1/2 tablespoon soy sauce 1/2 tablespoon gochujang 1/2 tablespoon gochugaru – adjust to taste 1/2 tablespoon sugar or sweetener of your choice- adjust to taste 1/2 teaspoon sesame oil 1/2 teaspoon sesame seeds 1/2 teaspoon vinegar Rinse the scapes, and trim off the tough ends and the tips of the buds. Cut them into about 2-inch lengths. Bring a small pot of water to a boil. Add a teaspoon of salt, and drop the garlic scapes in. Leave them in for about 30 seconds. Try one to see if they are tender to your taste. Drain quickly and plunge them in cold water. Drain well in a strainer. In a bowl, mix the scapes well with the seasoning ingredients, then enjoy! |
