1 cup Red Dog Farm Kohlrabi – peeled, shredded and drained (*see note below)
1/3 cup onion, diced
1/3 cup parmesan cheese, shredded
1/2 small jalapeno, diced
1/4 cup breadcrumbs
1/2 cup flour
1/4 tsp salt
1/4 tsp pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1 – 2 Tbsp olive oil (for cooking fritters)
Mix all ingredients in a large bowl until combined, it will form a sticky dough. Form the dough by hand into patties. Heat olive oil in a skillet on medium-high heat. Place patties in skillet and sear one side, takes about 3 minutes. Flip patties and sear about 2 minutes until lightly browned. Reduce heat to low and leave in skillet until cooked through, about 5 -7 minutes. Remove from skillet and enjoy! Serve with a side of sour cream for dipping.
*Note: after shredding kohlrabi sprinkle with a small amount of salt and let rest for 15 minutes to release excess liquid. Using a cheese cloth or your hands, squeeze out the liquid and add kohlrabi to bowl.
