Heirloom Tomato Salad
Serves 3.
2 Red Dog heirloom tomatoes
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp sugar
1 clove garlic, minced
1/2 tsp oregano fresh, chopped
Balsamic vinegar, aged
Champagne vinegar or white wine vinegar
2 Tbsp extra-virgin olive oil
1/2 scallion, thinly sliced, white and green parts
Cut the tomatoes into uniform slices and arrange the slices on a platter. Pour the tomato juices from the cutting board over the slices to keep all that good flavor.
Sprinkle the tomatoes with the salt, pepper, and sugar, then the garlic and oregano. Lightly drizzle the balsamic, then the Champagne vinegar, and then the olive oil over the top of the salad. Sprinkle the sliced scallion over the top.
Allow the salad to stand at room temperature for up to 2 hours. Serve with bread to sop up the amazing juices.
