Green Kale Salad
1 Bunch Red Dog Farm Green Kale
2 Red Dog Farm Carrots
1/2 Cup Toasted Almonds
1/2 Cup Crumbled Feta Cheese (optional)
1 Lemon, Juice and Zest
A Pinch of Sugar
1 Garlic Clove
4-5 Tbls, Extra Virgin Olive Oil
Salt and Pepper to Taste
To prepare the dressing: zest a lemon to produce ½ tsp of zest, then juice the lemon (some will be added to the kale in the next step. To the zest add 3 Tbls of juice and a pinch of sugar. Finely chop 1 garlic clove. Add 4-5 Tbls of Extra Virgin Olive Oil. Add salt and pepper to taste.
Pull or cut the leafy greens from the stem. Rinse and dry the leaves. Either tear the kale into pieces or slice into 1 ½ inch strips about ½ inch wide. Drizzle a little lemon juice and a pinch of salt over the greens and massage them to soften the kale- the kale will shrink and get darker during this process.
Peel and shred two carrots. Thinly slice 3-4 scallions. Prepare ½ cup of toasted almonds. Crumble ½ cup of feta cheese (optional). Add these items to the kale and toss with the dressing. Serve and enjoy!
