Gazpacho with Friends
Originating in Andalusia, Spain, gazpacho is a cold soup that is traditionally tomato-based and eaten during the summertime. The fun part about gazpacho is that you don’t need to cook anything – you simply cut up your desired produce and blend it all up! I was able to try this recipe recently amongst friends. Gathered around a living room coffee table, we sat and ate this fruitful dish discussing philosophical ethics, talking of our weekends, and laughing during a game of fish bowl. Whether enjoying this meal alone or with friends, you are guaranteed a tasty, seasonally-inspired meal.
Gazpacho
1 Red Dog cucumber
2.5 pounds ripe Red Dog tomatoes (about 5 large tomatoes)
1 Red Dog red bell pepper or 2 Red Dog Italian sweet peppers
¼ Red Dog red onion
2 garlic cloves
3 tablespoons red wine vinegar (Replacement option: lemon juice)
½ cup olive oil
2 tsp salt
2 tsp pepper
Fresh Red Dog herbs for garnish (ie: parsley, cilantro, chives, mint, dill
Chop up all produce. The only special note about preparing the produce is to peel the skin off the cucumber to ensure a smoother texture.
Throw all that stuff into your blender or food processor. Blend until you’ve achieved a smooth texture.
Chill gazpacho in the fridge for a minimum of two hours but you can also do whatever your heart desires – you could eat it right away.
Notes:
For a thicker consistency, add bread to the blended gazpacho, covering it with the mixture and letting it sit for about 10 minutes. Once softened, blend the bread into the mix.
Get creative with it! Gazpacho is traditionally tomato-based, but there are infinite variations available with a creative mind, like strawberry mint gazpacho.
Additional topping ideas for your finished gazpacho include: roasted chickpeas, drizzled olive oil, and hard-boiled eggs.
