Fresh Corn & Tomato Salad
Makes 4 servings.
3 tablespoons olive oil
1 tablespoon white wine vinegar
1 garlic clove minced
Pinch of red pepper flakes
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 ears Red Dog corn, kernels cut off the cobs
1 blue container Red Dog sungold tomatoes, quartered
2 scallions, thinly sliced, white and green parts separated
1 tablespoon chopped parsley
In a large bowl, whisk together the olive oil, vinegar, garlic, red pepper flakes, salt and pepper to make a vinaigrette. Stir the corn kernels, tomatoes and white scallions into the vinaigrette. Let marinate for 30 minutes. Stir in the scallion greens and parsley before serving.
