Delicata Squash & Gorgonzola Pizza

1 Red Dog Farm delicata squash, scrubbed clean
1/2 lb. of Red Dog Farm peppers, sliced
1 Red Dog Farm yellow onion, thinly sliced
2-3 leaves of chard, thinly sliced
6-8 ounces of Gorgonzola cheese
a couple of drizzles of extra virgin olive oil
1 pizza dough

Preheat your oven to 425 degrees. Carmelize the peppers and onion by cooking over low heat with olive oil in a cast iron pan, stirring occasionally for 15 minutes or so. In a separate pan cook the chard until it wilts (this prevents the pizza from getting too wet). Cut the delicata squash so that you will be able to cut it into full rings. Scoop out the seeds from both sides, thinly slice the squash and toss with olive oil. Prepare you pizza dough and lay the carmelized peppers and onions on the bottom, then toss on a thin layer of chard. Top the pizza with a layer of delicata squash rings* and the Gorgonzola cheese. Drizzle the edges with the olive oil and cook until the dough browns (transfer directly to the rack when you are able). Serve warm with a drizzle of balsamic if you choose!

*If you have extra delicata rings you can cook them on a separate baking sheet at the same time. Cook these rings until they are crispy delicata chips and toss with salt. These make for great snacking!
