Colorful Kale Salad with Tahini Dressing

 

1 bunch Red Dog Farm Lacinato Kale
1 lb. Purple Radishes
1 bulb Red Dog Farm Fennel

Dressing:
1/3 cup tahini
1/3 cup water
1/4 cup plus 1 Tbsp fresh lemon juice
2 garlic cloves
3/4 tsp salt
1/4 tsp honey (optional)

Remove the ribs from each kale leaf, slice leaves across into thin ribbons. Slice the radishes really thinly (or use a grater). Slice the fennel bulb into really thin slicers (or use a grater). Using a food processor, blend all the dressing ingredients until smooth. Dress the salad and toss lightly. Serve immediately.
