Cilantro-Lime Coleslaw
4 cups shredded Red Dog Farm Green Cabbage
1 cup shredded Red Dog Farm Purple Carrots
1/2 cup finely chopped Walla Walla Onion
1/2- 1 bunch Cilantro, chopped
3/4 cup mayonnaise or yogurt
1 lime, zested
2 tsp. fresh lime juice
1/2 tsp rice wine vinegar
2 cloves garlic, minced
2 tsp sweet chili sauce
2 tsp honey
Whisk mayonnaise or yogurt, lime zest, lime juice, rice vinegar, garlic, sweet chili sauce, and honey in a large bowl, stirring to dissolve honey. Mix cilantro and onion into dressing. Stir cabbage and carrots into dressing mixture, about 1 cup at a time, until everything is coated. Serve immediately.
