Brussels Sprout Salad
1 lb. Red Dog Farm Brussels Sprouts
2 tsp fresh lemon or lime juice
salt to taste
1 Tbsp apple cider vinegar
1 tsp olive oil
1 Tbsp minced Shallot
Use a mandoline to slice the sprouts thinly. Mix together the remaining ingredients and pour over the sliced sprouts. Toss to coat with the dressing. Add the feta cheese (as much or as little as you like) and toss lightly. Serve.
