Broccoli Beet Salad
Makes 6 servings.
3 Red Dog beets (cooked or fresh), chopped
1 bag Red Dog salad mix
1 head Red Dog broccoli, chopped
2 shallots, thinly sliced
1/4 cup Red Dog parsley
1/4 cup fresh dill
4 medjool dates, pitted, chopped
3 Tbsp pistachios, chopped
3 Tbsp almonds, sliced
Maple Dijon Dressing
1/4 cup extra virgin olive oil
3 Tbsp apple cider vinegar
2 1/2 Tbsp maple syrup
1 Tbsp dijon mustard
1/2 tsp salt
1/4 tsp pepper
Make the maple dijon dressing by whisking the dressing ingredients together. Cover it and refrigerate.
If the beets are raw, peel and grate them. If they are cooked, slice them into wedges.
Assemble the salad, starting with the salad mix. Add the broccoli, beets, shallots, herbs, dates, and nuts. Drizzle with salad dressing. Enjoy!
