Autumn Ham & Greens
3 Tbsp. olive oil
1/2 onion, chopped
1 cup Red Dog Farm carrots, shaved or chopped
1 cup cubed ham
1 Tbsp brown sugar
1 bunch Red Dog Farm mustard greens
3 Tbsp white wine vinegar (or any mild vinegar)
Add olive oil, onion, and carrots to a pan and saute until tender.
Add ham and stir until warm, then sprinkle brown sugar over the ham. Stir until caramelized, about 5 minutes.
Add mustard greens. Pour in vinegar and saute on medium-low heat, covered, for 20 minutes.
Uncover. Stir occasionally until the vinegar evaporates and serve with brown rice, barley, cornbread, or sweet potatoes.
