Arugula Sandwiches
All recipes make 2 sandwiches.
Ham and Arugula Sandwich
6-8 oz. honey ham deli meat
2/3 cup Red Dog arugula
2 tablespoon shaved fresh asiago cheese
Light mayonnaise
Dijon mustard
Freshly ground black pepper (optional)
2 ciabatta rolls or bread of choice
Bacon Chicken and Arugula Sandwich
2 flat breads or naans
3 tablespoon hummus
3 slices bacon, fried
4 ounces deli meat
2 slices monterey jack cheese
1 tomato, sliced
1 cup Red Dog arugula
1 teaspoon butter (for frying the sandwich in)
Goat Cheese Sandwich
2 slices sandwich bread
9 thin slices of English cucumber
1 small handful Red Dog arugula
1 oz fresh goat cheese
2-3 teaspoons sweet chili jam
Avocado, Arugula, and Walnut Sandwich
1 tablespoon lemon juice from 1 lemon
1 tablespoon olive oil
Salt and freshly ground black pepper
2 cups packed Red Dog arugula (about 2 1/2 ounces)
Two small, ripe avocados, mashed
4 slices wheat bread
2 tablespoons roughly chopped walnuts
In a large bowl, whisk together the lemon juice and olive oil. Season to taste with salt and pepper. Add the arugula to the bowl and gently toss to coat the leaves in the dressing. Set aside.
Season mashed avocado with salt. Spread 1 side of each slice of bread with the mashed avocado. Evenly divide the chopped walnuts and the dressed arugula among 2 of the avocado-covered bread slices. Top with remaining avocado-covered bread slices and serve.
