Toss this zesty arugula pesto with pasta, use on pizzas or crostini, top grilled meats, fish and seafood, or use it as a sandwich spread.
Makes 1¼ cups.
1/2 lb. Red Dog arugula
½ cup grated parmesan
3 Red Dog green onions, chopped
2 Tbsp. slivered almonds, deeply toasted
½ cup extra-virgin olive oil
Zest of 1 lemon
¼ cup fresh lemon juice
Salt to taste
Mince arugula, parmesan, green onions, and almonds in a food processor.
Add oil, zest, and lemon juice to processor; purée pesto, then season with salt.
