Arugula and Green Garlic Chimichurri

Arugula and Green Garlic Chimichurri

1 cup Red Dog Farm Arugula
½ cup parsley
1 stem Red Dog Farm Green Garlic
¼ cup olive oil
2 Tbsp. red wine vinegar
2 tsp ground cumin

In a food processor, pulse to combine arugula, parsley, and garlic. Transfer to a medium bowl. Add olive oil, vinegar, and cumin and stir until thoroughly combined. Serve as a garnish for meats or fish, a sauce for potatoes or tacos, a spread for crostini, or in a grilled cheese sandwich.
