Homemade Winter Salad Dressings
Apple Cider Vinegar Dressing
¼ cup apple cider vinegar
1 teaspoon maple syrup, or honey
1 garlic clove, grated
¼ teaspoon Dijon mustard
¼ teaspoon sea salt
Freshly ground black pepper
¼ cup extra-virgin olive oil
Whisk all ingredients together, or put all ingredients in a jar and shake until combined.
Caesar Dressing
⅓ cup whole milk Greek yogurt
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
½ garlic clove, minced
1 teaspoons capers, minced
Freshly ground black pepper
Whisk all ingredients together, or put all ingredients in a jar and shake until combined.
Ginger Miso Dressing
3 tablespoons extra-virgin olive oil
2 garlic cloves, minced
2 teaspoons freshly grated ginger
¼ cup fresh lemon juice
¼ cup fresh clementine juice (or fresh orange juice)
1 tablespoon white miso paste
Whisk all ingredients together. Taste and adjust seasonings, adding more miso (or a pinch of salt) if you would like your dressing more salty. Note that this dressing mellows once poured over vegetables. Store any remaining dressing in the fridge.
Chipotle Ranch Dressing
½ cup whole milk Greek yogurt
¼ cup mayonnaise
1 chipotle pepper from a can of chipotles in adobo sauce
1 teaspoon apple cider vinegar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried dill
1/4 teaspoon sea salt
Blend all ingredients in a food processor until smooth.
Avocado Dressing
1 ripe avocado, pitted
¾ cup water
¼ cup extra-virgin olive oil
3 tablespoons lemon juice
1 tablespoon fresh dill
½ garlic clove
½ teaspoon sea salt
Freshly ground black pepper
Blend all ingredients in a blender until creamy. If the dressing is too thick, stir in a little more water if desired.
