Tomato Zucchini Skillet
1/2 cup sliced green onion
1 clove garlic, minced
1 teaspoon vegetable oil
1 teaspoon sugar
1 small bay leaf
1 teaspoon salt
1/8 teaspoon pepper
2 pounds zucchini, unpeeled, sliced 1/2-inch thick
3 tomatoes, peeled and each cut in 8 wedges
Directions for tomato and zucchini recipe. Cook onion and garlic in oil until onion is tender. Add sugar, bay leaf, salt, pepper, and zucchini. Cover and simmer for 10 minutes, stirring occasionally. Add tomatoes; heat through. Remove bay leaf before serving tomato zucchini recipe.
